Easy, 9-Ingredient, Fresh Strawberry Cake

Wooh, chile. I am not a baker and have a deep appreciation for my talented friends who bake the most delicious things! My child bought a pound of strawberries and we knew we wouldn’t get to them in time, so I decided to make a strawberry cake. I don’t have many extra ingredients in the house to make fancier things, especially on the fly, so I used what I had to make this easy, simple cake.

This simple 9-ingredient strawberry cake turned out nicely and I was SHOCKED by that. Maybe it was the TLC I put into it, the power of prayer, or my good intentions. Whatever it was-- halleluyer!!!

I might try and add a half-cup of sour cream to make it even moister. I served this with a spot of whipped cream on the side— it wasn’t necessary, but it makes it that much more scrumptious. Garnishes that would go well with this cake are mint sprigs, slices of fresh strawberries, blackberries, blueberries, and/or chocolate shavings.

Ingredients

-3/4 pounds of fresh strawberries (1 container)
-1 1/2 cups of all-purpose flour (leveled off)
-1 1/2 teaspoons of baking powder
-1/2 teaspoon of salt
-1 stick of softened, unsalted butter (about a half cup)
-1 cup of sugar (+ 2 teaspoons, set aside)
-1 egg
-1 teaspoon of vanilla extract
-1/2 cup of milk (low-fat is ok)

Directions

1) Wash, de-stem, hull, and half the strawberries. I usually let my strawberries sit in a bowl of water + 1 tsp of salt for about an hour, then I rinse them off well.

2) Preheat the oven to 350 degrees F, grease a small loaf pan really well, and set that aside.

3) Mix flour, baking powder, and salt in a bowl and set aside.

4) Mix/blend softened butter with the sugar until it is thick and almost creamy (like thick icing). Blend in egg and vanilla extract.

5) Slowly blend in flour mix + milk (a little of each at a time) to the butter-sugar mix until all the flour and milk are blended in well. The mix will be very thick.

6) Pour mixture into the greased loaf pan and top with strawberries until covered (halved sides down). Sprinkle strawberries with remaining sugar.

7) Bake at 350 for 10 minutes, then turn the temperature down to 325 degrees and bake until the cake is done (golden on top, and a toothpick prick proves all batter is baked). I baked at 325 for about 45 minutes. Let cool and serve.
